Great Leftovers

Well, I just finished some great leftovers for lunch.  Last night I made a dish from Jay Kordich’s Live Foods, Live Bodies book.   We all really like it.

It’s not all raw, although there are a lot of raw veggies in it.  But it’s all vegan.  Sometimes we really enjoy a combination – some cooked/some raw.  This is what this recipe is.  It’s about 65-70% raw, you can make it more raw just by adding more raw veggies to it.

It’s a pasta based dish with a nice tasting healthy dressing.  We have enjoyed many recipes from Jay’s book.
